Make it once, eat it all week

The gap between "cereal again" and a genuinely good breakfast is smaller than it seems. It's not about superfoods or early-morning ambition — it's about having something ready that takes less than ten minutes to eat and holds you until noon without requiring you to think about it.

Boiled eggs keep in the fridge, in their shells, for up to five days — Sunday-you can take breakfast planning down to zero.

Porridge is the obvious starting point, and for good reason. Rolled oats cooked in milk or water — or half of each — cost almost nothing and take around five minutes on the hob. The trick is salt (more than you think) and something on top that adds contrast: a spoonful of nut butter stirred through, a handful of frozen berries warmed in the same pan while you stir, a drizzle of honey and a pinch of ground cardamom. Overnight oats work the same way if mornings are genuinely chaotic — combine oats and milk in a jar the night before, leave in the fridge, eat cold.

Eggs are the other anchor. Two eggs scrambled gently over a low heat — pulled off before they look quite done, they carry over — on good bread is a meal that keeps you full in a way that toast-and-jam simply doesn't. If you want something quicker still, full-fat yoghurt with a handful of whatever fruit is around and a scattering of toasted seeds is genuinely satisfying — the fat and protein in the yoghurt do the work that a sweetened low-fat version just can't.

You’ll need

  • 60 g rolled oats
  • 180 ml whole milk (or oat milk)
  • 1 tbsp natural yoghurt
  • Pinch of salt
  • To serve: fresh or defrosted frozen fruit, a drizzle of honey, toasted seeds

The method

  1. Combine oats, milk, yoghurt and salt in a jar or small bowl and stir well.
  2. Cover and refrigerate overnight, or for at least six hours.
  3. In the morning, stir — add a splash more milk if you'd like it looser.
  4. Top with fruit and seeds. Eat cold, or warm through briefly in a small pan.

None of this requires a special trip to the shops. The shift is just choosing one thing, making a small habit of it, and discovering that a better breakfast mostly makes itself.
